Feb 2013 – Elaine and her husband Brian decided to go Paleo (really, really Paleo) at the beginning of 2013. These are Elaine’s reflections after over a month of being strict Paleo.

Things I’ve noticed: The first week or so was very difficult. We both had headaches and low energy. In regards to sugar/carbs, days 5, 6 & 7 were hard.  Very tired.   But now, we’re both full of energy. Noticing energy levels are even without highs and lows. So, I guess the blood sugar is stable.    I used to make Brian’s lunch with several meals of half protein/half carb (brown rice, quinoa, pasta). All of his meals would be gone AND he’d get junk out of the vending machine. NOW he’s not eating as much….he comes home with meals left in his huge lunch bag. He says he’s no longer having cravings. Brian says he notices a difference in his skin. Since we’ve been off sugar and artificial sweeteners, everything tastes SO good. Having a sweet potato is like having candy! Brian is definitely noticing a difference in his allergies by not having dairy. I noticed too! I’d been off dairy for at least a month when My brother came for Christmas and brought his espresso machine. He made a vanilla latte with milk and I noticed this “yuck” in my throat.  Also, Brian is only working out 1 day a week and then a short bike ride here and there. He seems to think he’s gaining muscle on Paleo. He was very skeptical at first. Now he always says “I can’t believe how good I feel”. Funny to hear him say that. He’s a believer!

 Carol: Thank you for sharing Elaine! So many of us want to kick sugar and try to get to that “one ingredient” diet that we know is healthier for us. Your story is proof that it can be done and that life is a lot sweeter when you finally give up all that sweet stuff!
