 Frozen Banana Bites

Our own Zack Carlson from Oldtown, Idaho

2 Large bananas cut into chunks
1/3 cup of dark chocolate broken into pieces
1/4 cup of natural almond butter
 
Place the chocolate and almond butter in a glass bowl and microwave for one minute.
Stir rapidly till it is melted together and smooth.
Dip the bananas in the chocolate and place on parchment paper over a cookie tray.
Place in freezer for fifteen minutes or overnight.

Green Smoothie

1 cup spinach,1FROZEN banana, 1.5 cups green grapes and 1 cup brewed cold green tea or cup unsweet almond milk. Place all in blender

Frittata

Great recipe for eggs and it keeps well in the fridge:
1-2 potatoes – chopped child bite-size (add other veggies if too many carbs)
1 c chopped veggies (I like zucchini, red pepper and brocolli as my preferred combo)
1 chopped onion ( I use less cause I don’t like onions)
1 c chopped cooked meat (sausage, ham, bacon or my favourite Canadian/back bacon)
10-12 eggs
1 cup milk (or if that’s to many carbs you heavy cream and water)
generous sprinkling seasoning salt.
Preheat oven to 350.  Cook potatoes in microwave on plate for 1 minute, then cook over oil in cast iron pan until cooked through (don’t have to microwave, but sure speeds things up).  Remove potatoes, saute onions until soft, add remaining veggies and saute until softened.  Scramble eggs, milk & seasoning salt.  Add potatoes and meat to cast iron pan and mix up.  Pour egg mixture over and allow it to start to cook.  Place in the oven until set in the middle 20-35 mins depending on how full your pan was.  I slice it up like a pie and it’s delicious!

Sweet Potato Paleo Brownies

  • 4 oz Dark chocolate
  • 2 med Sweet Potatoes, boiled purple or red skinned firm fleshed
  • 1/4 cup Unpasteurized Local Honey
  • 3 Eggs
  • 1/4 cup Cocoa Powder
  • 1 tbsp Vanilla
  • 1 tbsp Coconut Flour
  • 1 tbsp Coconut Oil
  • 1 tsp Baking Soda
  • 1/2 tsp Salt

Method:

  1. Melt the dark chocolate in the coconut oil in either a double boiler, a steel or glass bowl over a pot of boiling water or in the microwave. I generally use the microwave at 30 second bursts , stir repeat until melted (usually in 1 1/2 minutes)
  2. Puree the sweet potato in a food processor until smooth, making sure there are no lumpy bits.
  3. Add in all of the other ingredients, and mix until very smooth and creamy.
  4. Transfer the batter to an oiled 8×8 or a 6×11 baking dish.
  5. Bake at 325 degrees for 35 – 40 minutes. Check for doneness by inserting a wooden skewer into the middle and seeing if it comes out clean. If not cook for another 5 minutes and test again.
